Cucumber Salad with Rosemary, Lime and Pear dressing

This was one of those, “we need to use these” kinds of things… We have a bunch of cucumbers in the fridge from the market that we wanted to make sure to use before they get funky, and the weather has been so hot that a salad sounded good. So, I have no idea the quantities of things, but this is what we put in it;

Cucumbers (3 kinds: English Cuke, pickling cukes, and a smooth skinned salad type)
Asparagus (tops diced into half inch sections)
Radish (thin sliced)

And for the dressing:
Walden Farm’s Pear Whote Balsamic Vinaigrette
Lime (2 limes, zest and juice)
Fresh Rosemary (one sprig simply pulled the leaves off and tossed it in, the other I minced the leaves to release more of the flavor)

We pretty much just chopped and dumped everything into the bowl, then tossed with the dressing. Turned out rather well, if I do say so myself. The Walden Farms dressings are a little overly sweet on their own, but with the lime and rosemary to cut it, it works well.

We will definitely be doing this again! Well, assuming we can get the pear dressing, it’s hard to find.
